Today I made 2 loaves of bread. They smelt super yummy while cooking and even though I do not normally eat bread, I just had to try it. It was very yummy spread with butter. Joel enjoyed some with peanut butter and Bethany enjoyed some with Jam. I did the dough in my food processor which coped ok but the dough was a bit heavy and it wasn't able to process it as long as I would have liked. Bring on the Thermomix!
Grainy Bread
750g organic, unbleached white wheat flour
1/2 cup LSA Mix (linseed,sunflower, almond)
1 tablespoon pepitas (pumpkin seeds)
1 1/2 teaspoons salt
2 teaspoons organic raw sugar
1 tablespoon cold pressed oil
12g yeast
500ml warm water
sesame seeds for top
1. Combine flour, LSA, seeds, salt, sugar, oil and yeast in processor. Pulse for a few seconds to mix.
2. Gradually add water until the dough has formed. Allow to process for a few minutes until it does not stick to the sides.
3. Place in greased bowl. Cover. Place in sunny spot for 45 minutes or until it has doubled in size.
4. Cut dough in half. Shape as desired. Place in greased pans (this makes 2 loaves). Brush with oil/ water and sit in sun for a further 30 minutes or until it has again doubled in size.
5. Preheat oven to 190 degrees (170 for fan forced oven). Brush with water and sprinkle with sesame seeds. Bake for 20-30 minutes or until golden and hollow when tapped.
6. Tip onto wire racks and cool. Cut and eat when cooled (if you can wait this long...)
